Fropie Edido Roasted Ground Specialty Coffee – Ethiopia


This region has gained a great reputation for producing the most sought after microlots. The village of Edidio is located in the Aricha sub-district of the town of Yirgacheffe in the Southern Nations and Peoples (SNNP) region – one of Ethiopia’s 11 administrative regions. High altitude, fertile soils, stable and heavy rainfall and the producers’ high knowledge in the region on production techniques are important factors that make Yirgacheffe coffee superior. Region-specific and wild-grown type trees are the main element that provides the distinctive taste of the coffees produced in this region. The coffee beans of this region have a refined flavor, with high citric acidity, sweet chocolaty and floral notes such as lavender, jasmine, bergamot and thyme. The optimally ripe coffee cherries are carefully classified at the stations where they are sent for washing, and after being separated from their pulp, are fermented for 36-48 hours, depending on the climatic conditions. After the fermentation process, the coffee beans, covered with a parchment layer, are completely washed and classified according to their specific weight before being dried in African-type raised sun beds for 12-15 days to reach ideal moisture levels. During the day, the coffee beans covered with this parchment layer are periodically rotated with rakes to ensure regular and homogeneous drying. The coffee beans dried in African type beds raised from the ground are covered between 12:00 and 15:00 at noon to protect them from strong sunlight, and this method is applied to protect them from precipitation and high humidity at night. When they reach optimum moisture levels, they are separated from the parchment layer and sent to the factory in Addis Ababa for sorting and hand selection processes in high-tech Sortex machines. The best quality coffee beans that pass through all these processes are filled into GrainPro sacks and exported.
